How do crabs become soft shells?
When a crab molts it comes out of it's old shell and becomes bigger and softer
and thus it's called a soft shell.

How long do crabs take to cook?
It depends on the amount of crabs and volume of steam. Once you have steam expect
about 15 minutes to steam the first layer and 3 - 5 minutes for each each additional
layer of crabs. (Times will vary depending upon the volume of steam present).

What is the black on the bottoms of some crabs?
The black coloration comes from the souther crab when it is ready to slough (or
become a soft shell). This coloration is a sign of a good, heavy crab.

How long can crabs live out of water?
We keep our crabs at a specific temperature and humidity level which enables
us to keep our crabs alive from 2 to 4 days upon receiving them fresh.

Can you eat a dead crab?
Absolutely NOT !

Why are seafood prices variable?
There are several factors that impact the price of seafood. First, the seafood
season. Each seafood has a specific season where the seafood is most plentiful.
During that time prices will be cheaper then at times when seafood is scarce.
In addition to the time of year you're trying to purchase seafood there is also
the matter of quality and sizes. Obviously the larger the seafood and higher quality
of the seafood the more the cost wil be.

How can I be sure that my seafood is fresh and of a good quality?
Never be afraid to ask. If the place you purchase your seafood can't answer your
question find a seafood establishment that can answer your questions. Do your
research and make sure you're buying USA whenever possible.
